Spicy Grilled Paneer Tikka

- 1 pound paneer cheese, cut into cubes
- 1 red bell pepper, seeded and cut into bite-sized pieces
- 1 green bell pepper, seeded and cut into bite-sized pieces
- 1 red onion, cut into bite-sized pieces
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper Wooden skewers, soaked in water for 30 minutes
In a bowl, whisk together the vegetable oil, lemon juice, cumin, paprika, coriander, ginger, garlic powder, salt, and cayenne pepper.
Add the paneer cubes, bell pepper pieces, and onion pieces to the bowl and stir to coat the vegetables and paneer with the marinade.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight.
Preheat your grill to medium-high heat.
Thread the paneer cubes, bell pepper pieces, and onion pieces onto the soaked wooden skewers.
Grill the skewers for 6-8 minutes, flipping occasionally, until the paneer is lightly browned and the vegetables are tender.
